Papas arrugadas (Canarian Potatoes) The local species of papas bonitas are used for Canarian potatoes, but most small, firm varieties will do an adequate impression. Wash the potatoes (small to medium) and put them in a large saucepan. Cover them with water and add course-grain sea-salt. The quantity of salt is a quarter of the weight of the potatoes - yes that's a lot of salt! Boil. Once the potatoes are cooked (time depends on quantity) leave to simmer slowly for another 20-30 minutes so they become wrinkled. They should take on a white coating once they have been drained and dry. If you want to cheat and speed that up, drain them, then put them back in the hot pan over a very low heat for a couple of minutes. |
